Mrs. Busby’s Best-Ever Muffins

In the early 60’s, when my mom was still a spunky kid, the town where she lived had a bake-off. The annual Agricultural Society Fair was a big deal. Folks came from miles around to see the livestock and the competitions. Women young and old folded and measured, sifted and canned their very best home-made dishes and put them up to be judged in front of the crowds. Mom was only ten years old but she was naturally ambitious and not surprisingly, she decided to throw her hat into the ring. She was competing against the very best; seasoned housewives and cookie-making grannies. The recipe she chose to enter was Mrs. Busby’s Bran Muffins.

Once you taste these amazing bran muffins, so light, sweet and filling you won’t be surprised when I tell you that my mom won the bake-off that year.


2 bananas

Add 1 egg

1/2 c. brown sugar

1/2 c. vegetable oil

2/3 c. plain yogurt or sour cream

In another bowl combine:

1 c. whole wheat flour

1 c. bran

1 tsp salt

1 tsp baking powder

1 tsp baking soda

1 c. raisins

Mix wet and dry ingredients together quickly and pour into greased muffin tin. Bake at 375F for 22-23 minutes.

    Yes I think Joss will gobble these ones up! It was actually Cally who instigated the muffin making today. They learn fast!

    Thanks Kim,
    I plan to make some of these tomorrow as Joss can use anything with bran right now and this will hit the spot as she loves muffins.
