Craving Judy’s Cookies

In a world intent on chaos, my Aunt Judy creates order. Her house is always spotless, her children are always well-dressed and her cookies are always perfect. If there is one thing you can count on- it’s that Aunt Judy has always got things under control (and some of her delicious cookies in the freezer!) I consider myself lucky in two regards; firstly, because I am a blood relative she freely shares these delightful, mouthwatering cookies with me. Secondly, because I now have the recipe.

In it’s unadulterated form, this cookie recipe is pretty heavy on the sugar so I’ve tweaked it a little bit…not too much though. You don’t want to mess with perfection. These sweet treats freeze well which helps with the self control. It’s much harder to overindulge when the cookies are shoved in the back of the freezer….just a sec’ I’ll be right back…,

…Scratch, that. It’s just as easy to overindulge when they are in the back of the freezer because these cookies only take about 18 seconds in the open air to thaw. YUM!

Try them for yourself and you’ll agree they literally are perfect.

Cream together:

1 c. salted butter

3/4 c. brown sugar

3/4 c. white sugar

2 eggs

2 tsp vanilla

In a separate bowl combine:

1 1/2 c. whole wheat flour

2 c. rolled oats

2 c. rice crispies

1 tsp baking soda

1 tsp baking powder

1 c. unsweetened coconut

1 c. chocolate chips

Mix it all together and bake at 350F for 10 minutes.

With only a week left until we depart for our friend’s destination wedding and a full batch of cookies in the freezer, I am now putting all my stock into yoga, jogging and stacking that monstrous woodpile.
