It’s Friday again which means another splendid play date with Goldy and the gang! At breakfast I thumbed through one of my favorite cookbooks looking for inspiration for the limited items in my fridge (by now you may have guessed that I do my groceries on Saturday). I found what I was looking for on page 27, Golden Cheddar Cheese Soup.
The Moosewood Restaurant Cooks at Home is one of the best books I own. The dog-eared state of this canon of cookery is proof to it’s popularity. EVERYTHING I’ve tried from it is wonderful! Sometimes I tweak a bit because that is my nature and I like to personalize, however today’s recipe required absolutely no changes (well ok, maybe just one teensy change) and I am quite happy to share it with you. Even Hermione had a few bites and she notoriously shuns blended soups.
Heat 2 Tbsp oil on med and saute 1 c. chopped onion in it until soft.
Add 2 medium diced potatoes, 1 cup up carrot, 1 c. pumpkin puree *(This was my change but if you like to go by the book stick to 1 chopped zucchini), dash of turmeric, pinch of ground pepper and a tsp of salt.
Pour in 2 c. water and simmer, covered until the veg are cooked.
Remove from head and stir in 1 c. shredded cheddar cheese. Let that melt and then add 1 c. milk.
To go along with this delicious soup we had a cannelini bean salad, green pepper and muchroom pizza (courtesy of Goldy) and hummus. Of course at the end it was Judy’s cookies again!
The weather is above average for March and so we enjoyed our feast to the sounds of tinkling wind chimes and skidding bike tires. An absolutely perfect day!
