Mediterranean Summer Salad

The basil is massive and smells divine! There’s something so heady about the herbal tangy flavor of basil. I’ve never travelled to the Mediterranian but in my mind, I’m convinced the rolling hills of Tuscany and the beaches of Crete  must smell like basil. These days I can’t even walk past my herb garden without salivating. Cally eats the shiny, billowy leaves just like that- often stuffing three or four pungent greenies into her little mouth at a time. Basil just makes everything better!

Here’s a simple summer time salad that uses basil to bring all the ingredients to the next level.

Serves 1 really hungry person, or four people as a side.

Put all of your ingredients into a nice salad bowl, toss and enjoy.

1 drained, and rinsed can of chick peas

6 leaves of fresh basil, chopped

1 large or two small seeded and chopped fresh tomatoes

1 minced clove of garlic

1/2 tsp sea salt

2 tsp lemon juice

dash of black pepper

1 Tbsp extra virgin olive oil
