It’s a little bit like all of your breakfast favorites all rolled into one; orange juice, yogurt and french toast. This delicious recipe is so yummy I found myself doubling up so that I could snack on it right out of the refrigerator all day long…My scale might not be so happy about that. The mellow orange and thick yogurt make this french toast recipe a definite keeper and the kids loved it too!
Inspired by my best friend and her Re-Bar cookbook recipe for yogurt pancakes, these fantastic frenchies are sure to please every palette in your home.
In a bowl combine:
zest from one naval orange
juice from one naval orange
1 Tbsp maple syrup
3 eggs, beaten
1/4 c. plain thick yogurt (greek is great! and even better is the Liberte brand lemon yogurt- it has a citrusy finesse that makes this recipe soar!)
Saturate your bread slices in this sloppy solution and then place on your pre-heated, buttered griddle (350F). Cook until both sides look nice and brown and then cover with a light shaking of icing sugar and enjoy. No need for syrup! Enjoy your weekend.
