Easy Refrigerator Pickles

What do you do when you have too many cucumbers to eat but not enough to make jars of dills out of? Why you make sweet refrigerator pickles of course!

Here’s the recipe:

Wash and slice about 6 cucumbers and one onion

Pour 1/4 c. salt over the cukes and let them soak in it for an hour.

Drain off the water that came out of the cucumbers and rinse your veggies well.

Stuff your cucumbers into a mason jar and make your brine.

Mix together:

2 c. sugar

1 tsp celery seed

1 tsp mustard seed

1 bay leaf

1 1/2 c. white vinegar

1/4 c. water

Stir until dissolved and then pour over cucumbers. Set in the fridge for two days and then enjoy!
