Oatmeal is fast becoming one of my favorite foods. You can do so much with it: porridge, granola, pancakes, meatballs, and today’s specialty- baked. The kids loved it and if the kids are happy and fed, then I did my job right!
For best results soak your oaks the day before in the milk and maple syrup.
Preheat oven to 350F (serves 3-4)
2 c. rolled oats (not the quick cook or instant kind)
1/4 c. maple syrup
3/4 c. milk
1/4 c. melted butter
1/2 tsp salt
1 tsp baking powder
1/3 c. dried cranberries
Soak your oats in maple syrup and milk overnight. The next morning, mix in one beaten egg, the melted butter and the rest of the ingredients. Bake at 350F for 20 minutes in a small covered dish.
