Simple Broccoli Cheddar Soup

IMG_2917This soup is deceptively delicious. I say deceptive because like a hungry lion camouflaged by the tall grass on the savannah or a polar bear stalking seals near the snowy north pole this soup ease of assembly belies it’s mind-blowing flavor. Yes I said mind-blowing and I mean it! Simple, fresh foods always make the very best-tasting meals. Once you get too complicated the casualty is usually taste.  All you need for this fantastic soup is:

1/2 head broccoli

4 c. stock (homemade chicken is best)

4 potatoes, peeled and cubed

2 c. grated cheddar cheese

salt and pepper to taste

In a medium saucepan bring your stock to a boil and toss in the potatoes. Cook for 5 minutes and then add your broccoli. Continue to cook another 3 minutes and then remove from heat. Pour soup into a blender (you may need to do this in two batches) and then, once pureed, return to the saucepan. Add your grated cheese and stir until it’s all melted. Salt and pepper to taste.

Serve this soup to your friends. Smile and nod knowingly when they gush over your fancy soup. Say nothing, just wink.
