Delicious, Detoxifying Asparagus Soup

Photo-Asparagus SoupIf you aren’t eating asparagus right now, why not?! It’s the perfect time of year to get your hands on one of spring’s earliest vegetables. You can find this crisp, snappy green in every grocery store as well as in the garden where it’s probably just poking it’s knobby little head out from the mulch. Asparagus is a fern, although most of us wouldn’t recognize it as such, since it doesn’t start to look ferny until it’s well part the edible stage. Asparagus is also a great detoxifying food. It’s nature’s spring cleaning vegetable- How appropriate. Packed with nutrients like vitamins A, C, E and K, chromium and fibre. It is also rich in glutathione, a detoxifying compound that helps break down carcinogens and other harmful compounds. In other words, Glutathione grabs toxins and drags them out of your body. Sounds great after a winter of heavy foods and sluggish activity.
And have you ever wondered about the way asparagus, ahem, changes the way your urine smells? Imagine that this smell is the toxins that glutathione is pulling out of your body. Eat asparagus long enough and your pee won’t have such a distinct odor anymore…eat plenty of greens and get your insides clean.
Asparagus is best when consumed just cooked but I am such a sucker for a good soup- especially because the weather hasn’t yet inspired me to eat a salad.

This bright cream of asparagus soup is simple, delicious, detoxifying and utterly amazing. Not too heavy, and full of simple flavor- your whole family will love it.

Serves 4

1 bunch asparagus with the tough, woody ends cut off- roughly chopped into 1 inch sections
6 c. stock
1 onion, diced
1 Tbsp dried Tarragon
1 lemon, juiced
Salt and pepper to taste
1 Tbsp oil
1/3 c. plain Greek yogurt

In a medium pot, heat onion in oil over medium. Sauté onion until soft (about 5 minutes) and then pour in broth. Add the asparagus and tarragon. Bring to a boil then reduce heat and simmer for five minutes, until the asparagus is tender. Remove from heat and whiz your soup smooth either in a blender or with an immersion tool. Pour in lemon juice. Add salt and pepper to taste. Mix in yogurt all at once or drizzle it into each bowl for a fun presentation. Eating well and getting your detox on never tasted so good!
