Autumn’s Applesauce Cookies

Photo-Apple Sauce Cookies copyLeafless trees are now devoid of their summer fruit, a chill wind blows and pumpkins are popping up as the bright orange harbingers of fall. All of these things tell tale signs culminate to produce the tastiest season of year. Fall may not be as carefree as it’s vernal neighbour but although the seasons have changed, Summer’s bounty is still everywhere for us to enjoy in it’s autumnal preserved forms: frozen spinach, dehydrated zucchini and sauced apples, the star of today’s Turning Ground offering.
Applesauce is a wonderful way to extend the harvest well into the winter months. It offers simple, sweet and diverse flavour to oh-so-many dishes. Today’s cookies are sweeter without added sugar. They are rich in fibre and totally amped up in flavour gets amped- all because of apple sauce. These apple sauce cookies are tender and cakey. They are especially scrumptious when topped with the lemon icing and they make a fantastic school snack. Simply freeze them by the batch and then pop them into lunch kids as needed.
Makes 2 dozen
Preheat oven to 350F
Cookies
1c. butter
1/2 c. brown sugar
14 c. white sugar
1 egg
2 1/4 c. flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 c. unsweetened applesauce

Cream butter and sugars together until smooth. Add egg and applesauce. In a separate bowl combine the rest of the dry ingredients, then mix everything together. Grease a cookie sheet or line it with parchment paper. Roll batter into pingpong sized balls and then gently flatten by pressing with your hand (it’s messy but worth it). Bake for 10 minutes. The edges should be just golden. Don’t over bake or you’ll end up with a very dry product.

Frosting
2 Tbsp cream
2 Tbsp butter
1 tsp lemon juice
1/2 tsp vanilla
pinch of salt
1 1/2 c. icing sugar

Cream all ingredients together excepts the sugar. Gradually beat in sugar with mixer on low. If the icing doesn’t look quite right adjust the final product by either adding more sugar (it was too runny) or more cream (it was too thick). Ice the cookies once they’ve cooled and store them in the fridge for a few days or the freezer for longer.
