Cool Down with Homemade Iced Cappuccinos

Photo-Iced Cappuccino copySummer is finally here and that means that sales of frozen coffee drinks at Canada’s biggest coffee chain have gone from ho-hum to warp speed. Everyone loves iced cappuccinos! The mouthwatering mixture of espresso, sugar, cream and ice (and possibly some mystery ingredients as well) is enough to send me into a frenzy that is normally reserved for the bedroom. I am crazy about those luscious drinks. But despite the deliciousness, they come with a heavy dose of guilt. They are, after all, so loaded with sugar and cream it’s tough to justify the calories. But what if it was possibly to blend up this bodacious treat at home and exercise complete control over what you are putting into your body? You could experience the best of both worlds colliding in your blender. Delicious flavours and healthy choices come together in this homemade version of the world’s most wonderful summer drink.
Serves 2
2 one oz. shots of espresso or strong, dark brewed coffee (instant coffee made strong will do in a pinch)
1c. 10 % cream
8 ice cubes
1/4 c. sugar (or 1/8 c. sugar and 6 drops of liquid stevia)

Put all of your ingredients into the blender and hit ‘go’! You may need to stop the blender periodically and push down the sides until you end up with something more or less uniform. Turn of the blender, test for sweetness and adjust to your taste.
